Here’s a nice thing about living in a neighborhood that still has stores from the Before Time. I wanted to make eggplant parmesan (parmagiana?) tonight, because lately I have been all about eggplant, and I already had the eggplant ready to go, all big and purple in my vegetable drawer. So. I stopped at Caputo’s on my way home and got a ball of fresh mozzarella, a container of homemade tomato sauce, and some parmesan cheese and WOW, shit is about to get crazy. I’m not talking about Weight Watchers-style baked eggplant with like half a teaspoon of olive oil. I’m talking, like, breaded and fried eggplant and lots of cheese and sauce, and of course some of that Smart Taste pasta that has all the fiber but isn’t whole wheat, which, if I have to be perfectly frank, I just don’t find as delicious as plain old white flour pasta.

I just hope the super gets here to fix my oven before I get hungry. I estimate he has about 2.5 hours.
